Accompanying the exhibition ‘Vera Mercer. The Voracious Eye,’ Penelope Volinia (PhD candidate at the University of Augsburg's Environmental Science Centre) will offer a workshop with tasting on the history and production of Kechek el Fouqara, a fermented cheese. Kechek al Fouqara, which means ‘poor man's cheese,’ is a food originating in Lebanon that is produced by fermenting bulgur. Penelope Volinia's academic work focuses, among other things, on traditional food fermentation in the Mediterranean region. In her workshop, she will first give a brief overview of the history of food preservation through fermentation, using Kechek al Fouqara as a particular example. Then, under her guidance, all participants will have the opportunity to make their own Keckek. The workshop will conclude with a tasting session. The workshop will be held in English. Please bring two medium-sized screw-top jars for the kechek.
